Chili Lime Shrimp Bowl
Ingredients
- 2 cups Cauliflower
- 1 tbsp Olive Oil
- 1 cup Shrimp
- 1 Zucchini diced
- 1 Bell Pepper chopped
- 2 slices Purple Cabbage Steak
Chili Lime Sauce
- 2 tbsp Greek Yogurt
- 1/2 tsp Lime
- 1/4 tsp Chili Powder
- 1/8 tsp Salt
- 1/8 tsp Black Pepper
- 1/4 tsp Lime
Instructions
- Preheat oven to 400°F.
- Chop vegetables
- Add the shrimp, peppers, cauliflower, red cabbage and zucchini to the oven. Cook until desired doneness.
- While everything is cooking, mix up the chili lime sauce. Add the yogurt to a mixing bowl along with the lime juice, chili powder, salt, pepper, and lime zest.
- Add the cooked cauliflower to the bottom of a bowl and start building your power bowl by adding on the 1/2 cup of grilled shrimp, peppers, zucchini and cabbage to each bowl. Top with the chili lime sauce and enjoy
